Where’s the tin foil honey, I need to throw these yellow bellies on some hot coals…. That’s the greeting I got as my husband and boys came back in to shore.
Fishing over the day in the tinny has brought us a bounty of fish and fresh water yabbies for dinner tonight and Stuart is our chief cook and the boys are his kitchen hands…
Stuart, Roger and Rubin are grinning from ear to ear as they show the girls and I what they caught us for dinner.
Three large yellow belly and a bucket full of some of the best looking yabbies I have ever seen.
I have already prepared some potatoes in the smaller camp oven with some oil, garlic and a bit of paprika, the sweet potatoes we brought from home are chopped and ready to add when the white spuds are closing in on done.

I race over and grab the tin foil which Stuart deftly wraps the fish in and drops them on the coals. The yabbies he knocks the tails off and shells them and chucks them straight on the BBQ plate.
If only you could smell this food cooking you would be salivating right now, even as I am writing this I am feeling hungrier than I have in days.
The yabbies are the first off and are our entree for tonights dinner, cracking a old beer Stuart passes them around with his homemade, bush seafood sauce.
The kids dig in and soon they are all gone and we are all eagerly awaiting the fish and veggies portion of tonights meal.
Grabbing the fish from the coals Stuart unwraps them and peels the meat straight off the bones and puts it on the plates as I dish the veggies up.
Wow, the kids are silent….

Looking up all you can hear from everyone is Mmmm, and OMG this is so yummy…followed by, why doesn’t dad do more cooking.
These days where we are camping out in the camper-trailer in the middle of know where are the best family times to have. Everyone is relaxed, carefree and just enjoying those simple things in life.
Our children are homeschooled so they are always doing some sort of educational exercises and fishing certainly covers that in a big way on this trip.
This trip out west onto the darling river area was one we will be repeating again next time we will be adding a kayak or two so that the girls and I can add a little competitive spirit to the fishing and see what comes of it.
For now though, I think I will kick back and relax with a cuppa and the fires glow lulling me into the tiredness that only a campfires warmth and glow can.
