Little Muffins of FUN!!!

It is time to make some snacks and today the eldest child is making some great “CARROT CAKE MUFFINS”

I don’t know if you are in, but I sure as hell am coming to lunch……

So what’s in the mix……

  • 1/2 cup brown sugar – pack this baby tight for the journey.
  • 1 cup coarsely grated carrot – just like you do for tacos.
  • 1 FRESH egg – straight from the chicken’s butt…
  • 1/3 cup of butter- I use softened when cooking with kids.
  • 1/3 cup apricots- just the stuff you get prechopped at the store is cool.
  • 3/4 cup SRF (self-raising Flour) – the best you can get to make the little beauties “soft and fluffy”
  • 1/2 tsp mixed spice- grabbed from the good old spice section at your local.
  • 1 tbsp PEPITAS – get your knife out and chop, chop, chop these to nice and diced.
  • You can add walnuts here 1 TBSP – I didn’t have them so omitted them this time…

Okay, I got the stuff, NOW WHAT???

Yeah, alright, so preheat the oven first before we start plunging into the mixing of these wonderful ingredients…

  • Preheat oven to 180 degrees (Aussie Style).
  • Get your paddy cases ready and line those 12 holes in your muffin tray.
  • Toss the butter, sugar, and egg together and whip it, whip it real good.
    • Make sure when you whip that baby it becomes thick, creamy, and whitish in color.
  • Add the carrot & Apricots (nuts if you are using them) and the wonderfully sifted flour ( 3 x sifted is AMAZING) and spices.
  • STOP, you aren’t whipping,, are you???? FOLD, FOLD, FOLDget that practice in for all the clothes you have to teach your kids to fold.
  • Place them into the patty cases that you already prepped and pop them in the oven for 20 minutes
  • Let the baby rest for an extra 5 minutes once out of the oven SSHHHHHH

WOW, they smell and look AWESOME – What makeup do they use to go out???

Make them SMILE with lemon cream cheese frosting—

  • 90g of cream cheese – yeah, I use Philly, but any you love is AWESOME…
  • 30g unsalted butter… makeup needs to be creamy.
  • 1 tsp lemon rind – make this super fine, or just add a squeeze of a lemon squeeze if you don’t have lemons around..
  • 1-1/2 cups of icing sugar – you could go and buy this if you want OR you could just grab a cup of sugar and toss it in your smoothie grinder and make your own… your choice.
  • Once the baby has rested and cooled down, you can pipe their makeup on to make them ready for their day out…

I didn’t have my piping bag, so we just grab big dollops and plopped them on, and looked after them “IN OUR BELLIES”
